I don't think you really need an iPad to test drive it's ergonomics. You could just cut a piece of cardboard out to the same dimensions and stick things to it so it's roughly the same weight... perhaps more bits of cardboard (corrogated of course)... then just walk about the office with it and pose randomly.
You'll look a bit of a prick doing it but you should get some realistic results.
