For mac users, you can use 'say' from the terminal with words (or text files) as input and it will output to a .aiff file of your choosing using -o. For more info, use 'man say'. (You can then convert the AIFF to mp3 with LAME, or just import it to itunes, set your cd import encoding options to mp3 and configure it as you like, then select the aiff and go to Tools -> Convert to MP3. Or a large variety of other ways, I just think that's simplest)
