Of you can just use Trillian/Adium X and they will log it all much easier.

Pidgin already does this. It may not be a very pretty log, but it works.

Pidgin like almost all other popular messengers logs your chat history locally.
This means that if you use IM from more then one computer you have your history partially on each computer, so you cannot access it all at once.
This means that your history can be accessed only from the computer where it was logged. Would you benefit to access it from your mobile?
This means that you should worry about backing up your logs because you can lose them on OS reinstallation or HDD crash.
It's just very brief and simplified list of benefits that IM-history offers you.

I downloaded this application and really like it; it almost instantly backs up the conversation to someplace online - I'm not sure if I can completely download the log from them but I do enjoy the fact I can browse my chats ANYWHERE now. Thanks!

I've been saving IM history for almost a decade now. MSN Messenger was my primary IM, and the Messenger Plus! add-on helped a lot in saving plain-text history. But then came along Google Talk with its online history saving feature and suddenly everything else seems archaic.
I don't use any other IM anymore.
