You are wrong, the ability didn't disappear in 7. iTunes 7 added the ability to store the file in the iTunes Database you can still add artwork to the tracks tag by dragging the album's artwork into the artwork box on the info box.

They did this to improve the speed of the video iPods. Artwork embedded in the files tag is slower to extract and display than artowrk that is stored as a separate file and linked to through your iTunes music database.
